Newsletter Excerpt Eat a rainbow Most of us do not get enough fruit and vegetables in our diets. The 2005 Dietary Guidelines for Americans recommend 5-9 servings of fruit and vegetables EACH day. How do you do that? One way is to "eat a rainbow" of colors at every meal. My challenge to you is to see how many colors you can add to each meal over the next two weeks. Drop me a note by 7/5 and let me know the largest number of different colored fruit and vegetables you had at one meal and include a description of the foods.
